Recipe – Jicama Summer Salad

Super Simple & Delicious!  IMG_3591

I’ve made this for work functions and for patient group classes.  All of the health professional staff rave about it.  Patients loved it.  It’s your turn!

  • 1 large jicama, sliced into pencil-size strips
  • 3 tablespoons finely chopped fresh cilantro
  • 2 limes, juiced and zested
  • 1/4 teaspoon salt

Combine in large bowl. Chill and serve cold.

Yep, that’s it!  Great for summer BBQs or to take for lunch to work!
