Recipe: Kale-Potato-Sausage Soup

Wow – This was a big thumbs up from my whole family!  Quick, too!  Only about 20-25 minutes from start to finish.  Tasty!!!

Kale-Potato-Sausage Soup


  • ½ onion, diced
  • 12 oz spicy or summer sausage, whatever type you like, sliced into bite size rounds
  • 2 teaspoons olive oil
  • Black pepper, to taste
  • 6 medium size russet potatoes, sliced into thin quarters
  • 1 quart chicken broth
  • 1 can evaporated milk
  • 1 bunch kale, torn into bite size pieces, stems removed

Cook onion and sausage in large stock pot with olive oil.  When onion is translucent, add pepper and potatoes.  Cook about 5 minutes.  Add broth and milk.  Bring to boil, then turn down heat to simmer until potatoes are fork-tender.  Stir in kale, pushing it down into broth to cook.  When wilted, turn off heat.  Serve hot, and garnish with grated Parmesan cheese, if desired.
