Recipe: Brownie Pistachio Energy Bites

Lunch box woes?  My kiddo is always asking for more ‘treats’ in her lunch.  IMG_5515In all honesty, if she made her own lunch it would consist solely of cookies, chips and lemonade!  We’ve recently grown to love the energy bites that are so popular on Pinterest & Instagram.  In looking for a chocolatey version, everything I found had some ingredients we didn’t have or didn’t care for.  This recipe is the result of an experiment in my kitchen this afternoon.  The two teens in my house today gave it a strong recommendation!  Perfect for lunch boxes, after school energy boosts, after a workout, or late night snacks!

Brownie Pistachio Energy Bites

Ingredients:

  • 1/3 cup roasted pistachios
  • 1/3 cup semi-sweet chocolate chips
  • 1/3 cup sunflower seed butter
  • 2/3 cup oatmeal
  • 2 tablespoons ground flaxseeds
  • 2 tablespoons cocoa powder
  • 1/4 cup honey

Grind up pistachios and chocolate chips in a small food processor.  Add in the rest of the ingredients and combine well.

Chill in a bowl in the refrigerator about 30 minutes.  Roll into teaspoon-sized balls and refrigerate until ready to eat!
