So….. here’s dinner #2 – Crispy Chicken with Brown Butter Corn and Tomato-Cucumber-Cilantro Salad. Sounds like comfort food to me! This is what it’s supposed to look like:
Ingredients were packaged nicely and compact. My only complaint was the corn was dry, and there was a suspicious spot on it….
I was excited to try an oven-baked crispy chicken. Fried chicken is sooooo yummy, but a pain to make and really loaded with calories and fat. The boneless skinless chicken thighs were huge in this package – about 6 ounces each. Recipe directions were simple, and this was the end result about 30 minutes later:
My family loved it! The chicken was tender, juicy and crispy on the outside. The thighs were dunked in sour cream and then dredged in panko crumbs, pan-fried for a couple of minutes on each side, and finished cooking by baking in the oven. Really tasty!
Even the corn perked up when cooked in a little butter…. what doesn’t taste good with butter, right?! It didn’t taste dry at all, and had a lovely sweet flavor.
I never buy those cute little cucumbers, but they sure taste fresh and crisp! I’m going to include them more often in our salads now. My kiddo doesn’t like tomatoes, so she wasn’t a fan of the salad….. no problem, just more for me!
