End-of-the summer zucchini still overflowing in your garden? I love the versatility of zucchini, and the fun new spiralizers on the market make fun shapes that are even more accepted by picky eaters! I recently tried this creation out for a party, and plan to share it with the Kids Nutrition Clubs I’m leading this fall at two locations! Fresh & tasty!

Zoodle Basil Tomato Salad
- 4-5 zucchini, trimmed and spiralized into zoodles
- 2 pints grape tomatoes
- 1/4 cup fresh basil, chopped
- Dressing: 1/3 cup balsamic vinegar + 1/4 cup olive oil + 1/4 teaspoon black pepper + 1/4 teaspoon garlic powder + 1/2 teaspoon salt
- 4 ounces mozzarella, cubed (optional)
Mix veggies together, or layer in glass bowl. Dress just before serving. Top with cheese cubes, if desired.
