Recipe: Fresh Cranberry Sauce

img_6329Confession:  I’ve never been a fan of cranberry sauce.  The canned stuff makes me gag.  But, this year I was motivated by another RDN’s recipe I saw online for a fresh cranberry sauce.  So beautiful, healthy and fresh!  Here’s my adaption from that recipe.  Turned out delicious!

Don’t limit yourself to Thanksgiving for cranberry sauce…. this delicacy can be served mixed into yogurt, oatmeal, ice cream, or as a condiment to simple grilled chicken or pork loin.  Enjoy it all year round!

Fresh Cranberry Sauce

  • 2 bags fresh cranberries
  • 1 orange – sections, juice and zest
  • 2 clementines – juiced
  • 2 tablespooons real maple syrup
  • 2 tablespoons fresh mint, chopped (+ additional sprigs for garnish)

In a food processor, place cranberries, orange sections/juice/zest, clementine juice, maple syrup and chopped fresh mint.  Process until smooth but still a little bit chunky.  Serve chilled and garnished with a few fresh mint sprigs.

Hope you love it!
